recipes have been collected from many sources over a number of years. Friends,
relatives, boxes, magazines, newspapers, and co-workers have contributed to the many
recipes listed on this page.
DIET (SUGAR FREE)
CRANBERRY MOLD
2 sm. boxes sugar, free cherry or
raspberry Jello
1 pkg. unflavored gelatin
3 1/2 c. boiling water
1 c. crushed pineapple, drained
2 c. whole fresh cranberries, chopped
Place all gelatins in mixing bowl and add boiling water. Stir until
dissolved. Chill until thickened. Add pineapple and cranberries. Pour
into Jello mold which has been sprayed with non stick cooking spray.
Chill until firm. This low calorie recipe is a wonderful alternative to
canned cranberry sauce.

ORANGE SALAD MOLD
1 (3 oz.) sugar free orange Jello
1 1/2 c. hot water
1 (3 oz.) fat free cream cheese
1/4 c. orange juice
1 tbsp. lemon juice
1 tbsp. grated orange rind
Dissolve orange gelatin in hot water. Gradually add to softened cream
cheese, blending until smooth. Add orange juice and lemon juice mixing
well. Chill until slightly thickened. Blend in grated orange rind. Pour
into mold and chill until firm. Unmold on lettuce on a serving plate.

JELLO MELON MOLD
1 pkg. sugar-free lime jello
1 c. boiling water
1 c. pineapple, drained
1 c. mandarin oranges, drained
1 med. cantaloupe or honey dew melon
Dissolve gelatin in boiling water; let cool. Add fruit. Peel cantaloupe;
cut slice from one end. Remove seeds and fill center with gelatin (can
put end back with toothpicks). Wrap in plastic war and refrigerate
overnight. When ready to serve, slice and put small amount of cream
cheese (or cottage cheese) on top if desired. Can vary fruit.
Strawberries and bananas are good.

SUGAR-FREE PUNCH
2 sm. pkgs. sugar-free Jello
(strawberry)
Dissolve in: 2 c. boiling water
Add: 3 c. cold water
2 cans unsweetened pineapple juice
(48 oz.)
Mix and divide into 3 portions. Freeze. One hour before serving, remove
from freezer and thaw to "slush" stage. To each portion add 1 (2 liter)
bottle of Diet Squirt (or Diet Ginger Ale). Makes 10 quarts. 40 8-ounce
servings.

STRAWBERRY FROZEN DRINK
1 sm. sugar-free Jello (berry)
Crushed ice
About 12 frozen strawberries
Mix Jello with 1/4 cup hot water and dissolve. Put all ingredients into
blender and mix until completely dissolved. Yield: 4 servings.

PINEAPPLE COOLER
8 oz. can crushed pineapple in juice
1 pkg. lime Jello, sugar free
3/4 c. boiling water
1/2 c. lemon sherbet, softened
Drain pineapple reserving juice. Add water to juice to make 1/2 cup.
Dissolve Jello in boiling water. Measure 1/2 cup Jello and add sherbet;
stir until completely melted. Add half the pineapple. Pour into 3 cup
bowl or 5 dessert glasses. Chill until set but not firm, about 15
minutes. Add remaining Jello. Chill until thickened and spoon into bowl.
Chill about 2 hours. Garnish with fruit and whipped topping Makes 2 1/2
cups or 5 servings.

DIET
CHEESECAKE
1 pkg. lemon Jello (can use sugar free)
1 (8 oz.) pkg. low-fat cottage cheese
1 (8 oz.) pkg. light cream cheese
1 (8 oz.) pkg. light Cool Whip
(defrosted)
1 lg. graham cracker pie crust
Put Jello in blender. Add 2/3 cup hot water. As blender is beating like
mad, add cream cheese and cottage cheese. Pour into bowl, fold in Cool
Whip. Pour into pie crust. Add strawberries, other fruit or Comstock
canned fruit as topping. Refrigerate.

ORANGE MANDARIN
SALAD
1 lg. box orange Jello, sugar free
1 (6 oz.) can mandarin oranges,
drain, save juice
1 c. lite Cool Whip
Prepare Jello using basic directions on box. Use mandarin juice for some
of the water. Put in bowl deep enough to use electric mixer. Chill until
partially jelled. Beat with electric mixer until light and fluffy. Add
mandarin oranges and Cool Whip. Chill and serve.

LEMON CHEESECAKE
1 graham cracker, crushed or 2 tbsp. graham cracker crumbs
1 pkg. lemon sugar free Jello
2/3 c. boiling water
1 c. low fat cottage cheese
8 oz. light cream cheese
2 c. Cool Whip Lite, thawed
1 c. reduced calorie cherry pie
filling
Spray 8" or 9" springform pan or 9" pie pan with non stick cooking
spray. Sprinkle bottom with graham cracker crumbs. Completely dissolve
gelatin in boiling water and pour into blender. Add cottage cheese and
cream cheese. Cover and blend at medium speed, scraping down sides
occasionally, about 2 minutes or until completely smooth. Pour into
large bowl. Gently stir in whipped topping. Pour into prepared pan.
Smooth top. Chill until set, about 4 hours. When ready to serve, remove
sides of pan. Top cheesecake with pie filling. Makes 8 servings.

CRANBERRY RELISH
1 pkg. (3 c.) raw cranberries
1 sm. orange, peeled & quartered
1 sm. can crushed pineapple with juice
1 pkg. sugar-free raspberry Jello
In blender container, process orange and crushed pineapple until smooth.
Add Jello powder and gradually add raw cranberries until entire recipe
is processed smoothly. Refrigerate.

DIET LEMON YOGURT
PIE
2/3 c. boiling water
1 pkg. sugar free lemon Jello
1 tbsp. grated lemon peel
1 tbsp. lemon juice
2 containers plain or vanilla low-fat yogurt
Graham cracker crust
Pour boiling water in a medium bowl; add Jello. Stir to dissolve. Place
your bowl in ice water to cool the Jello. Stir occasionally until Jello
starts to thickened. With a wire whisk, beat in lemon peel, lemon juice
and yogurt mix well and pour into shell.

STRAWBERRY PIE
1 graham cracker pie crust
1 (3 oz.) pkg. sugar free strawberry
Jello
1 1/2 lbs. sliced fresh strawberries
1 c. water
2 tbsp. cornstarch
Fill pie shell with fresh strawberries. Boil water, add box of Jello,
then add cornstarch mixed with cold water. Add to Jello and boil until
thickens, then pour over strawberries. Top with whipped cream or Cool
Whip.
